Gluten free Chocolate fridge cake

This gluten free chocolate fridge cake is very delicious and a real sweet treat.



125g gluten free or grain free cookies / biscuits ( I used some of my homemade low sugar peanut butter cookies )

150g dark chocolate gluten free ( I used Green & Blacks 70% )

50g unsalted butter

70g maple syrup

50g cherries

40g raisins

30g chopped pecans


I put cling film in a square baking tray so that it came up over the edges

Then melted the chocolate, butter and maple syrup together until smooth


I used a glass bowl over a pan of simmering water

then I added the cookies which I crushed using a rolling pin


I added chopped cherries, raisins and chopped pecans


I gave it a good mix and spooned it into the baking tray



this was put in the fridge for an hour or two

cut in to squares and store in an airtight container in the fridge


You can double this recipe if you are making this to share !



A great way to use up biscuits and cookies slightly passed their best.


You could also use grain free homemade biscuits to make this fridge cake

    In severel of your blogs you have talked about autoimmune diseases and asked if anyone also have a number of them like you to get in touch. I have 3 including suspected Celiac, be labeled as Non Gluten Celiac Intolerence. Like you I was already off the gluten before I was tested.
    Been reading your really interesting Blog and see that you are fairly local to me. Would love to know who your really helpful consultant specialist is as I don’t have one at the moment and Need a colonoscopy!yuk…

      Lovely to hear from you.
      I see Mr Jonathan Stenner based at East Surrey hospital & Dorking hospital Honestly Im not very impressed with him. He Never allows me time to speak or takes in what I have to say. I use diet to help me ( grain free / sugar free ) low cows milk etc I think he thinks I’m a nutter He eventually got me in for an Iron infusion But only because I went private in the end.
      I think there are a number of Gastro specialists locally . I think you have to be referred by your GP. All the best
