Gluten free Chocolate fridge cake

This gluten free chocolate fridge cake is very delicious and a real sweet treat.

Recipe

125g gluten free or grain free cookies / biscuits ( I used some of my homemade low sugar peanut butter cookies )

150g dark chocolate gluten free ( I used Green & Blacks 70% )

50g unsalted butter

70g maple syrup

50g cherries

40g raisins

30g chopped pecans

Method 

I put cling film in a square baking tray so that it came up over the edges

Then melted the chocolate, butter and maple syrup together until smooth

I used a glass bowl over a pan of simmering water

then I added the cookies which I crushed using a rolling pin

I added chopped cherries, raisins and chopped pecans

I gave it a good mix and spooned it into the baking tray

this was put in the fridge for an hour or two

cut in to squares and store in an airtight container in the fridge
